1 medium onion
1 Yukon Gold potato
10 eggs
Thinly slice one medium onion and one Yukon Gold potato. Sauté over medium heat until softened, not browned. Pour ten whisked eggs over potatoes and onions. Place in a 350° oven for 20 minutes, or until eggs set. Serve hot or at room temperature.
