1 can quality tuna
3c kale, chopped
3 mini sweet peppers
1 small onion
1 apple
1 tomato
2T olive oil
1T lemon juice
1T vinegar
2 garlic cloves, grated
salt and pepper
Place kale in bowl and pour lemon juice over, toss to coat. Add tuna with oil from jar. Slice the sweet peppers. Chop the onion, apple, and tomato. Add vegetable to salad, mix together. Add garlic, vinegar and more olive oil if needed. Season with salt and pepper. Toss together, mixing from the bottom. Enjoy!
