Sofrito is an aromatic vegetable base used to enhance flavor in Spanish cooking. The sweet caramelized onions and peppers make a great addition to a dishes flavor.
5 medium onions, diced
1 red bell pepper, diced
1 green bell pepper, diced
5 cloves garlic
2 oz. tomato paste
1/2c olive oil
Grate garlic in bottom of the cazuela. Add olive oil, onions, bell peppers and season with salt. Sauté at medium-high heat for 10 minutes stirring until light brown. Reduce heat to medium-low heat and cook for 45 minutes, stirring often. Mix in tomato paste and cook 2 minutes longer.
