3 large russet potatoes
3 carrots
4 hard boiled eggs
5 piquillo peppers
1/2c frozen peas
1c mayonnaise
1 jar quality tuna
Peel and cut 3 large potatoes into 1/2 in. chunks. Simmer potatoes for 5 min. Peel and dice 3 carrots. Add carrots to potatoes and cook until potatoes are soft and carrots are crunchy tender. Cut 4 hard boiled eggs into 1/2 in. chunks. Slice 5 piquillo peppers. Add 1/2c thawed frozen peas, 1c mayonnaise, and 1 jar quality tuna. Mix well.
