Roasted Eggplant with Red Pepper Romesco

1 bunch scallions
3 eggplant
8 mini sweet peppers
1/2c almonds
1 cayenne pepper
2T onion, roasted
5 garlic cloves, roasted
1 tomato, roasted
1 bell pepper
1/4c olive oil
1 slice of bread

Drizzle scallions, eggplant and peppers with olive oil. Place on grill and cook evenly.  Add 1/2C almonds and 1 cayenne pepper to mortar and grind. Add 2T roasted onion, 5 cloves roasted garlic, 1 roasted tomato, 1 bell pepper, 1/4C olive oil and 1 slice bread. Grind together. Top peppers, eggplant, and scallions with romesco.
