Roasted Beets

3 golden beets
2 purple beets
2T shallot, chopped
1T fresh thyme
3-4T olive oil

Using a mandolin slice the beets to 1/2” thickness. Salt and pepper generously. In a bowl, mix shallot, thyme, and olive oil. Toss beets in olive oil mixture. Arrange on platter and roast at 375° for 35-40 minutes or until beets are tender.
