1 onion, sliced
5 cloves garlic, grated
2 zucchini, sliced
2 yellow squash, sliced
10 tomatoes, quartered
16 oz. mozzarella, sliced
fresh basil
salt and pepper
In an olla, saute 1 sliced onion and 5 grated cloves of garlic in olive oil. Add 2 sliced zucchini, 2 sliced yellow squash and 10 quartered tomatoes. Salt and pepper to taste. Add a handful of freshly torn basil. Simmer until vegetables are soft. Stir in 16 oz. sliced mozzarella. Serve once cheese is melted.
