Potato and Cabbage Soup

2 Russet potatoes
1 onion
2 celery stalks
1/2 head of cabbage
4 strips bacon, sliced
2 bay leaves
1c cannoli beans
2c ham stock
spinach
salt and pepper

Cube 2 russet potatoes. Dice 1 onion and 2 stalks of celery. Chop 1/2 a head of cabbage. Slice 4 pieces of bacon. Add all to an olla with salt, pepper, bay leaf and a handful of spinach. Cover with ham stock. Cook at 350° for 1 1/2 hours. Add one cup cannoli beans. Heat through and serve.
