2 summer squash
1 eggplant
1 onion
2 red peppers
1 green pepper
3 zucchini
2 tomatoes
5 0z. Manchego cheese

Cut up 2 summer squash, 1 eggplant, 1 onion, 2 red peppers, 1 green pepper, 3 zucchini, and 2 tomatoes. Fry in cazuela and once vegetable are al dente add 5 oz. of Manchego cheese and melt. Serve and enjoy.
