Panzanella is a tuscan salad using leftover stale bread.
3 tomatoes
1 cucumber
1/2 onion
1 grated garlic clove
1/2 cup olive oil
1/4 cup vinegar
Chop equal amounts of tomatoes and cucumbers, add grated garlic and onions. Dress with simple olive oil and an acid such as lemon juice or vinegar. Basil and/or Oregano can be added, but its not necessary.
