1 lb. salmon fillet
3T olive oil
1/4c lemon juice
1T red wine vinegar
1t salt
1T basil
2t oregano
2t fresh parsley
4 garlic cloves, grated
1 zucchini, sliced
1/2 red onion, wedges
6 mini sweet peppers, sliced
6 oz. cauliflower
lemon slices
Mix olive oil, lemon juice, red wine vinegar, salt, basil, oregano, parsley and grated garlic to make marinade. Place salmon in cazuela and cover with half of marinade. Marinate 1 hour. Arrange vegetable around salmon, top with rest of marinade. Cook at 425° for 40 minutes. Serve with lemon slices and enjoy!
