Lavender Shortbread Cookies

1 1/2c butter
2/3c granulated sugar
1/4c confectioners' sugar
2T lavender buds
1T mint leaves, dried
2 1/2c all purpose flour
1/2c cornstarch

Mix 1 1/2C melted butter, 2/3C granulated sugar and 1/4C confectioners’ sugar. With a mortar and pestle grind 2T lavender buds and 1T dried mint leaves. Beat into butter mixture. In a separate bowl mix 2 1/2C all purpose flour and 1/2C cornstarch. Beat into butter mixture. Divide the dough in half and wrap in saran wrap. Refrigerate 1 hr. Roll dough to 1/2 in. thickness. Cut into 1 in. rounds. Place on baking sheet and bake at 325° for 18-20 minutes.
