Lamb Tajine

2 lbs. lamb, cubed
2 cloves garlic, grated
1 c onion, chopped
1 T ginger, grated
1 t turmeric
1/2 t saffron threads
1 c apricots
1/2 c dried prunes
1 bouquet garni -thyme, cinnamon stick, parsley
1 c almonds

Brown 2 lbs cubed lamb. Add 2 cloves grated garlic, 1 cup chopped onion, 1 tbsp grated ginger, 1 tsp turmeric, 1/2 tsp saffron threads, 1 cup apricots, and 1/2 cup dried prunes.Top with bouquet garni of thyme, cinnamon stick and parsley. Cover and cook at 350° for 1 hr 45 min. While lamb cooks heat 3 tbsp of olive oil in sarten. Add 1 cup almonds and fry. Top lamb with fried almonds.
