Eggplant and Tomato

1 eggplant
3 Roma tomatoes
5 scallions
2 garlic cloves
3T sherry vinegar

Slice 1 eggplant into rounds. Bake at 350° for 30-45 min. Cut 3 Roma tomatoes. Chop 5 scallions. Grate 2 cloves of garlic. Add 3T sherry vinegar. Mix and top eggplant.
