Slaw
4c shredded cabbage
2c shredded carrots
1c cooked shelled edamame
4 scallions, sliced
1/2c chopped peanuts
3/4c chopped cilantro
Ginger Peanut Dressing
1/4c honey
1/4c vegetable oil
1/4c rice vinegar
1 1/2T soy sauce
1t sesame oil
1T peanut butter
1T grated ginger
2 grated garlic cloves
Whisk all dressing ingredients together in a bowl. Toss in vegetables and let set for 10 minutes to absorb. Delicious!
